Yesterday, I left out one of my favorite mushrooms whether the Japanese or American kind. The Japanese have special pots in which they simmer slivers of the mushroom and serve the soup at great price. Here, they are less expensive, also found cultivated and can be used in the mushroom recipes where firm mushrooms are called for.
