Sorrel Revelation

I had a break through today. In the next day or so the recipe that came out of it will show up in the recipe of the week on the web site bkafka.com. After many years of carefully cleaning sorrel by removing the stems which become stringy when cooked, I suddenly thought: "I wonder what would happen if I cooked the stems?" I hate waste. The cut up stems were boiled in water and low and behold the water that I drained off tasted deliciously of sorrel. From this i made soup. I don't know what will come next.

This is still a good recipe. There will be others when my new book, The Intolerant Gourmet, comes out in a few months.
Remember to use a stainless steel pot.
