Curry Paste

When I wrote the recipe for Souper soup, I didn't realize that I was going to learn about a whole new group of ingredients, the chili and curry pastes from Asia. My favorite is Thai Kitchen Green Curry Paste. I also like Tom Yum Paste Por Kwan (chili paste with holy basil leaves) from Thailand.
Oddly enough, I got involved with these in Brattleboro, Vermont, which now has an Asian and an Indian grocery.

I'm a fan of Thai Kitchen Green Curry Paste, too!
I also think they make a superior Peanut Sauce.

How about trying Nittaya brand curry pastes as these are the closest you can get to homemade curry pastes -

They come in large bags but you can store the paste in the freezer in 1-2 tablespoon chunks. That is what I have been doing for the past couple of years with these pastes.
